This healthy spicy avocado egg salad sandwich is a great dairy-free spin on the traditional salad sandwich. It's packed with protein, fiber, good fats and comes with a punch of heat!
With 2022 coming in hot, I decided to throw a few healthy recipes into the mix. Don't be fooled: this isn't a "new year, new me" situation. 2022 will see the same me but with slightly brighter hair (see this post for the reveal). I do however believe that balance is key, hence this delicious Spicy Avocado Egg Salad Sandwich.
Egg salad sandwiches were my go-to lunch for a long time. Like, ridiculously so. While I love them still, the addition of avocado makes them that much better.
Avocados also allow this recipe to be dairy-free. Thanks to the creaminess of the avocado means the recipe doesn't require mayonnaise. While I don't follow a dairy-free diet, this is definitely a bonus for those who do.
I used a grainy bread for this sandwich, however you can easily go with crackers, tortillas, or whatever other vessle you prefer.
I also used pea shoots since they're high in antioxidants and carotene. If you can't find peas shoots locally, you can easily grow them yourself. Coming from someone who has zero green thumb, when I say they're easy to grow, I mean it. All you need is a sprouting jar and some seeds! In the event that you can't snag any, feel free to use whatever leafy green you have on hand.

Recipe
Spicy Avocado Egg Salad Sandwich
Ingredients
- 4 Eggs, large & hard boiled
- 1 Avocado, ripe & mashed
- 1 teaspoon Dijon
- ½ teaspoon Cayenne pepper, ground
- 2 tablespoon Chives, fresh & finely chopped
- 2 tablespoon Red onion, finely chopped
- Pea shoots, for garnish (optional)
- 4 slices Bread of choice
Instructions
- In a medium bowl, combine all the ingredients. Stir until evenly coated.
- Divide the mixture and scoop onto two slices of bread. Top with pea shoots, sprouts or greens of choice.
- Slice and serve!
