I’m going to go out on a limb and say that many of us will be staying in this Valentine’s Day. While take-out is always a great option, you may have reached the point where you know the delivery guys by first, middle and last name (thanks, global pandemic) and are instead leaning towards cooking. STARTER
This recipe is not only super tasty, but it also takes very minimal effort to assemble – only 4 steps, to be precise. I’m a big fan of smoked salmon and use any excuse I can to eat it. COCKTAIL
I decided to bring out the big guns for this post and add my Blackberry Tequila Lemonade recipe to the mix. Tequila can do no wrong in my opinion (unless taken as shots – then you may find yourself twirling on a tabletop screaming “yo quiero Taco Bell” while wearing your bra as a hat), and my favourite cocktails usually involve this particular distilled liquor. I love the combination of sweet and tangy that this Blackberry Tequila Lemonade brings to the table and if you’re a fan of tequila, I think you will love it too. MAIN
This is a simple yet vibrant dish with a herby punch. It’s also ready within 30 minutes, which is just long enough to enjoy a cocktail (like the Blackberry Tequila Lemonade mentioned above) with your partner while it’s cooking. No partner? No problem. This dish reheats well the next day for lunch, so nothing is wasted. The cashews add a nice amount of protein to the dish but grilled chicken could easily be added as well if desired. DESSERT
When I call Crème Brûlée the George Clooney of custards, I mean it. This sexy dessert is also a lot of fun since you have to torch the top layer before serving. The idea here is to impress your partner with the fiery theatrics, not catch your hair on fire, so please ladies wear a bun for this (trust me – I’m speaking from experience).
