I’m not ready for summer to be over yet. I actually died a little inside while shopping for back to school supplies for the kids. Not to sound like a complainer but on top of this summer vanishing faster than my paychecks, I feel like I was gypped last summer too. As some of you know, I had a baby last July which was both wonderful and awful (yeah, I said it). Ok moms, let’s be honest here; having a newborn is hard. Like, really hard. I’m not sure why we feel the need to pretend that everything is rainbows and fucking unicorns when it comes to raising children however I’m here to tell you that it’s anything but. The reality is I spent most of last summer looking like an extra from the Walking Dead. No joke. Summer 2018 came and went and although I was so grateful for our new baby I also felt incredibly exhausted and overwhelmed. This year was easier in the sense that the youngest now sleeps at night (hallelujah) but returning to work just as summer kicked off sucked. Anyway, all of this to say that I’m holding onto every shred of summer we have left. To keep patio season going, I decided to make London Lemonade because what drink screams summer more than (spiked) lemonade? With only four ingredients, this recipe is also supper easy which is a welcome bonus when you’re a tired mom of three.

Here’s what you’ll need:
- 2 oz gin
- 4 to 6 oz fresh lemon juice
- 1 oz simple syrup
- Lemon wedge for garnish
Here’s what you’ll do:
- Pour gin and simple syrup into a tall glass filled with ice.
- Top up with freshly squeezed lemon juice.
- Garnish with a lemon wedge.
- Pretend fall isn’t upon us and enjoy.
