In a medium saucepan, combine the cherries, water, sugar and orange zest.
Simmer over medium heat for 10 minutes.
Remove from heat. Mash cherries with a fork. Set aside from 15 minutes.
Strain syrup into a glass jar. Discard solids.
For the cocktail
In a large pitcher, combine the cherry syrup, bourbon, orange juice and orange bitters. Stir to combine. Refrigerate until ready to serve. Serve on ice and garnish with an orange slice, cherries and mint if desired. Enjoy!
