This healthy spicy avocado egg salad sandwich is a great dairy-free spin on the traditional salad sandwich. It's packed with protein, fiber, good fats and comes with a punch of heat!

Ingredients
  

  • 4 Eggs, large & hard boiled
  • 1 Avocado, ripe & mashed
  • 1 teaspoon Dijon
  • ½ teaspoon Cayenne pepper, ground
  • 2 tablespoon Chives, fresh & finely chopped
  • 2 tablespoon Red onion, finely chopped
  • Pea shoots, for garnish (optional)
  • 4 slices Bread of choice

Instructions
 

  • In a medium bowl, combine all the ingredients. Stir until evenly coated.
  • Divide the mixture and scoop onto two slices of bread. Top with pea shoots, sprouts or greens of choice.
  • Slice and serve!
