4 Eggs, large & hard boiled 1 Avocado, ripe & mashed 1 teaspoon Dijon ½ teaspoon Cayenne pepper, ground 2 tablespoon Chives, fresh & finely chopped 2 tablespoon Red onion, finely chopped Pea shoots, for garnish (optional) 4 slices Bread of choice
In a medium bowl, combine all the ingredients. Stir until evenly coated.
Divide the mixture and scoop onto two slices of bread. Top with pea shoots, sprouts or greens of choice.
